Beets

Beets are nutrient-dense and not all that hard to grow, provided you give them decent soil and enough water. Plant them about 2–3 months before the expected first frost date for a fall crop, or plant your first round of beets a few weeks before the last spring frost date for a crop in the spring. Beet seeds don’t like to germinate when temperatures are below 50 degrees Farenheit, so keep that in mind. If it’s too cold, they may rot in the ground or fail to emerge until later.

Beets take about two months to start being of a harvestable size and sometimes longer. The greens are also edible, though when eaten raw they can sometimes make your throat scratchy.

One cool trick is to cut open a beet and get the juice on yourself. This makes people think you’re bleeding and is loads of fun at parties, weddings, and other social occasions.
